    Upside Down: Rhubarb Upside Down Cake (from mix)

    List of Ingredients

    1 stick butter (1/2 cup)
    1 cup brown sugar
    2 cups diced rhubarb (fresh or frozen)
    1/2 teaspoon cinnamon
    1 box yellow cake mix (2 layer size)

    Recipe

    Melt butter into 8x14 " heatproof glass pan in 375ºF oven. Add browl sugar and spread uniformly over bottom of pan. Sprinkle diced rhubarb uniformly over browl sugar. Sprinkle cinnamon over rhubarb. Prepare cake mix according to package directions and spread over rhubarb. Bake for 30-45 minutes, depending on whether thawed or frozen rhubarb is used, or until browned on top. Serve warm with vanilla ice cream.
