    1 pint cream
    3 pints sugar
    1 stick butter (1/2 cup)
    1 teaspoon vanilla
    1 quart pecans (or more)

    Recipe



    Combine cream and 2 pints sugar in large pan while melting 1 pint sugar in cast iron skillet. When sugar is melted, combine, while cooking, with sugar and cream mixture, slowly. Cook to medium ball stage and add a heaping teaspoon of soda, stirring hard. Add butter, and let set 10 minutes. Beat with electric mixer till thick. Continue beating with spoon till it will hold its shape. Add pecans and pour into buttered 9 x 12 pan.

    Tips and Notes:
    A wooden spoon must be used when melting the sugar in the skillet.
