    Toffee: Christy's Toffee

    List of Ingredients

    1 cup butter
    1 1/4 cups sugar
    2 tablespoons water
    1 cup chocolate chips
    4 teaspoons corn syrup
    1 1/2 cups sliced almonds
    1 teaspoon vanilla

    Recipe

    Butter a jelly roll pan. In medium size heavy saucepan over low heat, melt butter. Stir in sugar, water and corn syrup. Cook over medium heat til mix reaches hard-crack stage on candy thermometer, stirring constantly. Remove from heat; stir in one cup of almonds and the vanilla. Immediately pour mixture into prepared pan; quickly spread evenly. Cool for 2 minutes. Sprinkle chocolate over warm toffee; let stand 2 minutes to soften, then spread chocolate evenly. Sprinkle chocolate with remaining 1/2 c. almonds. Refrigerate til chocolate is set; break into pieces. Store covered in fridge. Can be frozen.
