    Amish Country Cookbook Vol II

    List of Ingredients





    BOTTOM LAYER:
    1/2 cup firmly packed brown sugar
    1/4 cup shortening
    1/4 cup butter
    1 cup flour, sifted

    SECOND LAYER:
    2 eggs, well beaten
    1/2 cup firmly packed brown sugar
    1/2 cup light corn syrup
    1 teaspoon vanilla
    2 tablespoons flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 cup shredded coconut meat
    1 cup coarse chopped walnuts

    Recipe



    Blend sugar and shortening with butter; stir in flour. Pat out onto bottom of ungreased 9x9 inch pan. Bake at 325ºF for 10 minutes. Meanwhile, blend eggs, brown sugar, corn syrup and vanilla. Add flour, baking powder and salt, mixing well. Stir in coconut and nuts and spread over bottom layer. Return to oven and bake for 25 minutes longer or until golden brown. Cool, then cut into bars. Makes 24.
