    Brittle: Microwave Mix Nut Brittle

    List of Ingredients

    1 cup packed brown sugar
    1/2 cup maple syrup
    12 ounces lightly salted mixed nuts
    1 tablespoon butter
    1 teaspoon baking soda

    Recipe

    Heat oven to 200ºF; generously butter large cookie sheet; keep warm in oven. Mix brown sugar and maple syrup in 8 cup microwavable measure; microwave uncovered on high for 5 minutes. Stir in nuts. Microwave uncovered for 5-7 minutes or until syrup is bubbling and nuts are toasted -- syrup will be VERY hot. Stir in butter, then microwave uncovered for 1 minute. Quickly and thoroughly stir in baking soda until mixture is light and foamy. Pour onto warmed cookie sheet; quickly spread candy. Cool for 30-60 minutes or until hard. Break into pieces. Makes 2 pounds of candy.
