    Amish Country Cookbook Vol II

    List of Ingredients





    1/2 cup butter
    2 3/4 cups powdered sugar
    1 tablespoon instant coffee powder
    1/4 cup boiling water
    1/4 teaspoon salt
    2 cups rolled oats, uncooked
    6 ounces chocolate chips, chopped
    1 cup pecans, finely chopped

    Recipe



    Beat together butter and sugar until light and fluffy. Dissolve coffee powder in water. Blend coffee and salt into butter mixture. Stir in oats, chocolate and 1/2 c. chopped pecans. Chill about 30 minutes. Shape to form one inch balls and roll in remaining pecans. Chill several hours or overnight. Store in fridge. Makes 4 dozen; can be frozen.
