    Pralines: Brandied Chocolate Pralines

    List of Ingredients




    1 cup granulated sugar
    1 cup brown sugar packed
    1/3 cup whipping cream
    1/3 cup brandy
    2 tablespoons light corn syrup
    3 tablespoons butter
    1/4 teaspoon salt
    2 squares unsweetened chocolate (1 ounce) cut up
    1 cup coarsely chopped pecans
    Pecan halves for decoration - if desired

    Combine sugars, cream, brandy, corn syrup, butter and salt in a heavy 2 1uart saucepan. Stir over moderate heat till sugars dissolve. Place candy thermometer in mixture and boil to 230 degrees F. Add chocolate and continue cooking to 234 degrees F (soft ball stage) Remove from heat and let stand 10 minutes. Add chopped pecans and stir till mixture thickens and begins to lose its gloss. Quickly drop by rounded teaspoons onto buttered baking sheet or waxed paper. Top with a pecan half before candy sets (if desired) about 30 pieces
