Toffee: Homemade Toffee

1 pound butter
2 1/3 cups sugar
2 cups whole pecans
6 tablespoons water
2 teaspoons vanillaRecipe
In a 6 - quart pan, mix all ingredients. Bring to a boil, stirring constantly. (It will go through a foamy stage, then it will pull away from the sides of the pan and look doughy). Continue stirring until the mixture begins to stick to the sides of the pan and turns light brown. Still stirring, pour the mixture onto a marble board and spread with a spoon. As the mixture begins to cool, lift the edges and flip the entire piece over. Score and let cool. Cut with pizza cutter, then wipe each piece with a cloth. Store in an airtight container.
