    Blueberry: Blueberry Topped Cheesecake

    List of Ingredients

    CRUST:
    1 cup graham crumbs
    3 tablespoons sugar
    3 tablespoons melted butter

    CHEESECAKE:
    2 packages cream cheese
    3/4 cup sugar
    1/4 cup flour
    2 eggs
    1 cup evaporated milk
    1 1/2 teaspoons vanilla

    BLUEBERRY TOPPING:
    3 cups fresh blueberries
    1/4 cup water
    1/4 teaspoon nutmeg
    1 cup sugar
    2 teaspoons butter
    2 tablespoons cornstarch
    2 tablespoons lemon juice

    Recipe

    Make crust by mixing ingredients till blended. Press into bottom of 9" springform; bake at 325ºF for 10 minutes. Meanwhile, prepare filling by creaming cheese with mixer. Add sugar, flour and eggs (one at time). Beat till smooth, then add vanilla and milk. Mix till blended. Pour slowly over crust; bake at 325ºF for 40 minutes. Remove to cooling rack. Prepare topping by combining berries, sugar, water and nutmeg; cook until berries are tender. Add butter and cornstarch dissolved in lemon juice. Cook til mixture thickens, about 2-3 minutes. Cool; spread over cheesecake. Refrig til time to serve.
