    CRUST:
    1-1/2 cups graham cracker crumbs
    6 tablespoons butter or margarine, melted
    1/3 cup sugar

    FILLING :
    2 envelopes unflavored gelatin
    3/4 cup water
    5 eggs, separated
    2/3 cup sugar
    2/3 cup lime juice
    1/2 cup rum
    1-1/2 teaspoons grated lime rind
    1-1/2 teaspoons grated lemon rind
    3 8-ounce packages cream cheese,    softened
    2 cups heavy cream
    1/2 cup confectioners' sugar

    Recipe



    CRUST: Preheat oven to 350°F.  Grease a 9-inch springform pan with butter. In a medium bowl, combine all ingredients; mix until moistened.  Pat into bottom of prepared springform pan. Bake for 10 minutes.

    FILLING: In a small saucepan, combine gelatin and water; let stand for 5 minutes to soften.

    In a small bowl, combine egg yolks and sugar; beat until well blended.  Stir into gelatin mixture.  Add lime juice, rum, and rinds; cook, stirring constantly, until mixture thickens and bubbles.  Remove from heat; cool.

    In a large mixing bowl, beat cream cheese until light and fluffy.  Gradually add gelatin mixture, blending well.

    In a medium bowl, beat cream until soft peaks form; gradually beat in confectioners' sugar until stiff peaks form.  Fold into cheese mixture.  Pour into prepared crust.  Refrigerate at least 6 hours before serving.
