Strawberry: Sugarless Strawberry Cheesecake

2 pounds cream cheese
1/2 cup honey
5 cups fresh strawberries
8 ounces thawed apple juice concentrate
3 tablespoons cornstarch
1 teaspoon vanilla
red food coloring
graham cracker crust


Recipe

Beat cream cheese, honey and vanilla; pour in crust. Pour 4 tablespoons apple juice in cup; blend with cornstarch. Boil until thickened this mixture and remaining apple juice concentrate. Add one cup crushed strawberries and red coloring until desired color; cool. Add 4 cups raw strawberries. Mix carefully. Put in pie shell. Add whip cream; garnish if desired.
