    Chocolatetown Special Cake

    List of Ingredients

    1/2 cup cocoa powder
    1/2 cup boiling water
    2/3 cup shortening
    1-3/4 cups sugar
    1 teaspoon vanilla extract
    2 eggs
    2-1/4 cups self-rising flour
    1-1/3 cups buttermilk
    One-Bowl Buttercream (below)

    Recipe

    Preheat oven to 350°F.  Spray 2 9-inch cake pans with non-stick vegetable spray. In a small bowl, combine cocoa powder and boiling water, stirring until smooth.

    In a large mixing bowl, cream shortening, butter, and vanilla until light and fluffy.  Add eggs, beating until blended.  Add flour alternately with buttermilk, beating well after each addition.  Beat in cocoa mixture until blended.  Pour into prepared cake pans.

    Bake 35 to 40 minutes or until a tester inserted in the center comes out clean.  Cool in cake pans for 10 minutes.  Remove from cake pans; cool completely on a wire rack.  Fill and frost with One-Bowl Buttercream.


    ONE-BOWL BUTTERCREAM
    6 tablespoons butter or margarine, softened
    2-2/3 cups confectioners’ sugar
    1/2 cup cocoa powder
    1 teaspoon vanilla extract
     
    In a medium bowl, beat butter until light and fluffy.  Add confectioners’ sugar and cocoa powder alternately with milk; beat until smooth and of spreading consistency.
