    Oatmeal: Chewy Oatmeal Spice Cookies

    Recipe Introduction

    List of Ingredients

    5 1/4 cups firmly packed brown sugar
    3 1/2 cups sugar
    1 3/4 cups unsalted butter, softened
    1 quart + 1 cup apple butter or applesauce
    7 eggs
    3/4 cup + 2 tbl. milk
    1/4 cup + 1 tbl. vanilla extract
    10 1/2 cups flour
    2 tablespoons + 1 tsp baking soda
    2 tablespoons + 1 tsp cinnamon
    1 1/4 tablespoons salt
    1 3/4 teaspoons nutmeg
    3 3/4 pounds oatmeal, uncooked
    7 cups raisins

    Recipe

    Preheat oven to 350ºF. Lightly spray a cookie sheet with nonstick cooking spray. Beat together sugars and butter until well blended. Add next 4 ingredients and beat well. Combine flour and next 4 ingredients in another bowl. Stir into sugar mixture. Stir in oatmeal and raisins and mix well. (Dough will be moist.) Drop by rounded tablespoonfuls onto prepared cookie sheet. Bake 10-12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheet and remove to wire rack. Cool completely. Store in tightly covered container.

    Variation: Easy Bar Cookies: Spread dough evenly onto bottom of an ungreased 13x9 inch baking pan. Bake 25-30 minutes or until edges are light golden brown. Cool completely and cut into bars. Store tightly covered.
