    Meringue: Chocolate Cinnamon Meringues

    List of Ingredients

    2 egg whites
    1/2 teaspoon vanilla
    1/4 teaspoon cream of tartar
    1/4 teaspoon ground cinnamon
    2/3 cup sugar
    2 tablespoons unsweetened cocoa powder

    Recipe

    Spray a cookie sheet with nonstick spray; set aside. Combine egg whites, vanilla, cream of tartar and cinnamon in a small mixing bowl. Beat with an electric mixer on medium speed till soft peaks form. Stir together sugar and cocoa powder. Add sugar mixture to egg whites, 1 Tbsp. at a time, beating on high speed about 5 minutes or until mixture forms stiff peaks and sugar is dissolved. Spoon egg white mixture into a decorating bag fitted with a large star tip. Pipe 1 1/2 inch mounds 1 1/2 inches apart on prepared cookie sheet. Or drop by rounded teaspoonfuls. Bake in a 325ºF oven about 20 minutes or till bottoms are lightly browned and cookies are set. Remove from cookie sheet; cool on wire racks. Makes 36 meringues.
