    LAVA:
    1/2 cup semisweet chocolate chips
    1/2 ounce unsweetened chocolate
    1/2 cup sweetened evaporated milk
    1 1/2 teaspoons vanilla

    COOKIE:
    1 3/4 cups flour
    1/4 teaspoon + 1/8 tsp baking soda
    1/4 teaspoon salt
    11 tablespoons unsalted butter, room temp (1 stick+3tbl)
    3/4 cup smooth peanut butter
    1/2 cup + 1 tbl. packed brown sugar
    6 tablespoons sugar
    3/4 teaspoon vanilla
    1 large egg

    Preheat oven to 350ºF and grease baking sheets. To make lava, melt chocolates together in microwave or over double boiler. Combine milk and vanilla. Stir melted chocolate vigorously into milk until mixture is smooth and well blended (use a whisk). Using mixer on medium speed, cream butter, peanut butter, sugars and vanilla until light and fluffy. Add egg and beat on medium speed until well blended. Add flour mixture and blend well. Measure out heaping tablespoons of dough and roll into balls. Place balls 2" apart on cookie sheets. Press deep hole into center of each ball with your thumb, then put a heaping teaspoon of lava mixture into hole. Pinch opening together a bit so lava won't overflow, but is still visible. Bake cookies until lightly golden, 16-18 minutes. Cool on cookie sheets. Store in freezer up to 2 weeks. Makes 30 cookies.
