    1 cup unsalted butter, room temperature
    4 ounces cream cheese, room temperature
    1 cup sugar
    1 egg yolk, room temperature
    1 teaspoon vanilla
    2 1/2 cups flour
    3/4 teaspoon kosher salt

    Recipe



    Preheat oven to 325ºF. Place the butter, cream cheese and sugar in the bowl of a mixer fitted with a paddle and mix until smooth. Scrape down the sides of the owl, add the egg yolk and vanilla, and stir to combine. Scrape down the sides of the bowl, add the flour and salt, and mix until all is well incorporated.

    To form the cookies, break off small pieces and roll into 1 inch balls. Place on an ungreased cookie sheet and flatten each ball with a wet drinking glass or your hand. Can also roll them: Chill dough at least 2 hours, until firm, then roll dough to 1/4-1/2" thickness, and cut with any shape cookie cutter. Carefully transfer to a baking sheet with a spatula. Bake until golden brown, about 14-16 minutes. Cool for 2 minutes and then remove to a rack. Cool the cookie sheet between batches. Makes 3-4 dozen.
