    Cream Wafer Cookies *

    Recipe Introduction

    These are very light and delicate.

    List of Ingredients

    1 cup butter
    1/3 cup whipping cream
    2 cups flour

    FROSTING:
    1/2 cup butter
    1 1/2 cups powdered sugar
    2 teaspoons vanilla

    Recipe

    Mix and chill: 1 c. butter,whipping cream and flour. Heat oven to 375ºF. Roll 1/3 of cold dough at time (chill the rest) to 1/8" thick. Cut into 1 1/2" circles, and coat both sides with sugar. Place on ungreased sheet and prick several times with fork. Cook for 7-9 minutes until set but not brown. Cool on rack, then sandwich the cookies in pairs filled with frosting.

    For frosting, cream 1/2 c. butter, powdered sugar and vanilla. Tint with food coloring if desired. I usually make extra frosting to go with them. You could also probably add in different extracts to the frosting (like mint or almond) for some variety.
