    List of Ingredients




    3/4 cup whole wheat pastry flour
    3/4 cup white flour
    1 teaspoon baking powder
    1/8 teaspoon salt
    4 ounces silken tofu, drained
    1/4 cup + 2 tbl. chunky almond butter
    1/4 cup + 2 tbl. light olive oil
    1/2 cup packed light brown sugar
    1/4 cup maple syrup
    1 tablespoon vanilla

    Recipe



    Preheat ovent o 350ºF. In a bowl sift together the flours, baking powder and salt. In another bowl, mash the tofu and combine with the almond butter, olive oil, brown sugar, maple syrup, and vanilla. Using a rubber spatula, fold the wet ingredients into the dry ones. Roll the mixture into 1 inch balls, place on ungreased baking sheets, and press flat with the back of a fork. Bake the cookies about 10 minutes until edges just begin to brown. Makes 48.
