    List of Ingredients




    3/4 cup whole wheat pastry flour
    3/4 cup white flour
    1 teaspoon baking powder
    1/8 teaspoon salt
    1/4 cup toasted sesame seeds
    3/4 cup raw almonds, coarsely chopped
    4 ounces silken tofu, drained
    1/2 cup light olive oil
    3/4 cup packed light brown sugar
    1 tablespoon almond extract

    Preheat oven to 350ºF. In a bowl, sift together the flours, baking powder and salt. Mix in the sesame seeds and chopped almonds. In another bowl, mash the tofu and combine with the olive oil, brown sugar and almond extract. Using a rubber spatula, fold the wet ingredients into the dry ones. Roll the mixture into 1 inch balls, flatten between your palms, and place them on ungreased baking sheets. Bake the cookies about 10 minutes, until the edges begin to brown. Makes 48.
