    Recipe Introduction

"Dutch Hail is the English translation of the Dutch title for these thin, crisp, buttery, nut cookies."

    List of Ingredients

    1 cup butter, softened
    1 cup sugar
    1 egg yolk
    1/2 teaspoon ground cinnamon
    2 cups all-purpose flour
    1 egg white
    1 tablespoon water
    1/2 cup finely chopped nuts

    Recipe

Lightly grease a 15x10x1-inch baking pan, set aside. In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in sugar and egg yolk until well mixed. Stir in cinnamon. Gradually stir in flour (mixture will be stiff).

Pat dough evenly in prepared baking pan. In small bowl, beat egg white and water with a fork until frothy, brush over dough in pan. Sprinkle with nuts.

Bake in a 350 degree F oven about 20 minutes or until lightly browned. Set baking pan on wire rack. Using a sharp knife, immediately cut into squares or strips (cookies will shatter if cooled before cutting). Cool completely in pan on wire rack. Makes 50 pieces.
