    2 cups flour
    1 teaspoon baking soda
    1 tablespoon ground ginger
    2 1/2 teaspoons cinnamon
    3/4 teaspoon nutmeg
    3/4 teaspoon cloves
    1/2 teaspoon ground allspice
    3/4 teaspoon salt
    12 tablespoons unsalted butter, room temp
    1 cup sugar
    1/4 cup lightly packed dark brown sugar
    1/4 cup dark molasses
    1 large egg

    Preheat oven to 375ºF and lightly grease cookie sheets. Sift flour, baking soda, all spices and slat. Using mixer on medium speed, cream butter and sugars until light and fluffy, about 1 minute. Scrape bowl and then add molasses, mixing well. Add egg and mix until incorporated. Scrape bowl again and then mix in flour on low speed. Drop dough by heaping tablespoons 2 inches apart onto baking sheets. Bake for 15-16 minutes, until still slightly soft. Let cool completely on baking sheets. Store in airtight container with plastic wrap between layers. Makes 16 cookies.
