    1/3 cup brown sugar
    1/3 cup honey
    1/4 cup oil
    2 egg whites
    1 cup pumpkin puree
    1 cup white flour
    1 cup rolled oats
    1/2 teaspoon each baking soda, baking powder, nutmeg, cinnamon
    1/2 cup raisins

    Recipe



    Preheat oven to 400ºF. In large bowl, mix together sugar, honey, oil, egg white, and pumpkin. In med bowl, mix together dry ingredients. Add raisins. Lightly combine wet and dry ingredients. Drop by rounded teaspoonfuls about 2" apart onto nonstick baking sheet. Bake for 10 minutes. Yield: 36 cookies.
