    Recipe

Preheat the oven to 325ºF. Lightly grease a cookie sheet. Place the butter and sugars in the bowl of a mixer fitted with a paddle and beat until smooth. Scrape down the sides of the bowl, add the egg and vanilla, and mix until just combined, being careful not to overbeat. Scrape down the sides of the bowl, add the oats, flour, nut flour or finely ground nuts, baking soda, baking powder, salt, chocolate chips, and nuts and mix until everything is well incorporated. Place tablespoonfuls 2 inches apart on no the prepared cookie sheet and transfer to the oven. Bake until brown on the edges and soft in the middle, about 12-13 minutes. Do not overbake. For crisper cookies, cool on the cookie sheet. For softer cookies, cool for 2 minutes and then remove to a rack. Cool cookie sheets between batches. Makes 3-4 dozen.
