    1/4 cup butter
    2/3 cup sugar
    1/3 cup lemon juice
    2 lemons peels grated
    1 egg white
    powdered sugar for sprinkling
    4 eggs separated

    Recipe



    Butter a 1 1/2 quart souffle dish sprinkle with granulated sugar. In a heavy sauce pan heat the butter with 1/3 cup of sugar and lemon juice until the butter and sugar are melted.

    Take from the heat and beat in the 4 egg yolks one by one. add the lemon rind. Heat very gently, stirring constantly until the mixture thickens to a consistency of heavy cream. Keep the mixture covered at room temperature, it can be prepared 3-4 hours in advance at this point.

    Twenty minutes before serving, set the oven at 425 degrees. Quickly whip egg whites add the remaining 1/3 cup of sugar and beat until sugar is dissolved and mixture is glossy.

    Gently heat lemon mixture until hot to the touch stir a 1/4 of the egg whites into the lemon mixture to lighten then fold in the remaining egg whites. Pour into the soufflÈ dish and bake at once for 12-15 minutes. Until puffed and brown, Sprinkle with confectioners sugar and serve at once.
