    2 cups Strawberries
    1 tablespoon Lemon juice
    1 tablespoon Kirsch
    2 tablespoons Cornstarch
    2 tablespoons Sugar
    1 pinch salt
    1/2 cup water
    1/2 tablespoon butter

    Recipe



    In the container of an electric blender or food processor, place the berries, lemon juice, and kirsch and process until smooth. In a heavy enameled saucepot, stir together the cornstarch, sugar, and salt. Slowly stir in the water, keeping the mixture smooth and free of lumps. Pour in the berry pure and place the pot on a heat-deflector pad over medium heat. Stir while cooking the sauce until it thickens and turns translucent, then cover, reduce the heat, and cook for 2 minutes longer. Remove the pot from the heat, cool for 5 minutes, then stir in the butter to dissolve. Cool the icing a little before using.
