    Blueberry: Blueberry Pie

    List of Ingredients

    2 ready made refrig pie crust
    1 tablespoon vinegar
    1 teaspoon grated lemon rind
    1/2 cup + 2 tsp sugar
    5 cups blueberries
    1/2 teaspoon cinnamon
    1 tablespoon butter

    Recipe

    Place uncooked pie crust in 9" pie pan. In large bowl, gently toss berries, lemon, cinnamon, 1/2 c. sugar and 1/3 c. flour. Spoon berry mix into crust. Cut margarine into small pieces and sprinkle on top of berry mix. Preheat oven to 425ºF. Moisten edges of bottom crust with water. Place top crust over filling and trim dough edge, leaving 1 1/2" overhang.

    Fold overhang under, making decorative edge. With sharp knife, cut a 4inch "X" in center of top crust - fold back points of the X to make square opening in center of pie. Sprinkle top of pie with rest of sugar. Bake for 40 minutes or til filling begins to bubble and crust is golden. If crust browns too quickly, cover edges with foil. Cool on rack before serving.
