    Blueberry: Blueberry Sour Cream Pie

    List of Ingredients

    3 tablespoons Sugar
    1/4 teaspoon Cinnamon
    1/8 teaspoon Salt
    1 Pinch nutmeg
    2 cups Blueberries
    3 Eggs
    1 cup Sour cream
    1/4 cup Honey
    1/4 cup Sugar

    Recipe

    Prepare a 1-crust 9" pie shell. Chill 30 minutes. Bake 400ºF for 10 minutes. In bowl, beat 1 egg white and 2 tsp. sugar until frothy; brush pie shell with glaze and bake 350ºF for 15 minutes. more.

    FILLING: In dish combine 3 tb. sugar and cinnamon, salt, and nutmeg. In bowl, toss blueberries with this sugar mixture In a small bowl, beat the eggs with the sour cream and the honey and sugar. Add this custard mixture to the berries. Pour into prepared pie shell and bake at 325ºF for 1 hr. Serve warm.
