    Caramel: Caramel Custard Pie

    4 eggs, slightly beaten
    1/4 teaspoon salt
    1 cup sugar
    3 cups milk
    1/2 teaspoon vanilla
    1 package refrigerated piecrust, ready made

    Recipe

    Preheat oven to 450ºF. Make caramel by putting 1 c. sugar in pan, melting slowly over direct heat, cooking until dark brown (do not scorch). Now add the hot scalded milk to this. To the slightly beaten eggs, add this mixture slowly. Add vanilla and salt. Line a pie pan with pastry, and pour the filling in; sprinkle with nutmeg. Bake in preheated oven for 10 minutes, then reduce heat to 325ºF, baking for 30-40 minutes longer, until knife inserted comes out clean.
