    Caramel: Caramel Pie

    List of Ingredients

    2 cups sugar
    2 cups milk
    1/8 teaspoon salt
    1/2 cup flour, sifted
    4 egg yolks, beaten
    2 baked pie shells (8")

    Recipe

    In small iron skillet, caramelize 1 c sugar. In saucepan, put remaining sugar, flour and salt. Mix well. Gradually add milk, stirring constantly. Add eggs and stir over gentle heat until mixture begins to steam. Add caramelized sugar, stirring quickly. Cook until thick. Pour into pie shells and let cool. Top with meringue. The flavor depends upon skill in caramelizing the sugar. The longer the sugar is browned, the deeper the flavor and color. Sugar burns easily; use caution.
