    Cherry: Cherry Crunch Pie

    1 prepared graham or butter flavor pie crust
    1 large egg yolk -- slight beaten
    1 21 ounce can cherry pie filling
    1 tablespoon cornstarch -- mixed with
    12 tablespoons water
    2 tablespoons sugar
    2 tablespoons light brown sugar -- firmly packed
    1/3 cup flour
    1/3 cup quick oats
    3 tablespoons melted butter

    Recipe

    Preheat oven to 375ºF. Brush bottom and sides of crust with egg yolk. Bake on baking sheet until lightly browned, about 5 minutes. Remove from oven. Place cherry pie filling in a bowl. Combine cornstarch and water to make a smooth paste. Mix into pie filling and spoon into prepared crust. Combine sugar, brown sugar, flour and otas. Mix in melted butter. Spoon mixture over pie filling. Bake at 375ºF on baking sheet, 35 minutes. Cool at least 4 hours on a wire rack. Serve at room temperature.
