    Cream: Alabama Rum Cream Pie

    List of Ingredients




    5 egg yolks
    3/4 c sugar
    2 1/2 tb plain gelatin
    1/2 c cold water
    3/4 c cream
    3 tb dark rum (or to taste)
    crumb pie shell (10-inch)

    Recipe



    Beat egg yolks until light and add sugar. Soak gelatin in cold water; put over low heat, until dissolved. Pour over sugar and egg mixture, stirring briskly. Whip cream until stiff, fold into the egg mixture, and flavor with rum. Chill until mixture begins to set; then pour into pie shell. Chill until firm. Sprinkle top generously with shaved bittersweet chocolate curls. Ganish with whipped cream, if desired, and serve cold.
