Lemon: Lemon Cheese Pie

List of Ingredients

CRUST:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
1/4 cup brown sugar
1 teaspoon cinnamon

FILLING
12 ounces cream cheese, softened
2 eggs
1/2 cup sugar
1/4 cup lemon juice
2 teaspoons grated lemon rind


Recipe

Combine all crust ingredients in bowl; mix 30 seconds. Press into 9" pie plate and bake at 350ºF for 3 minutes. Cool on wire rack. For filling, beat all on medium speed for 30 seconds. Stop and scrape bowl. Whip 15 seconds more. Pour into crust and bake at 350ºF for 30-35 minutes.
