    Pumpkin: Pumpkin Pride Pie

    List of Ingredients

    2 cups pumpkin one 15-ounce can
    14 ounces sweetened condensed milk
    2 eggs
    1 teaspoon ground cinnamon
    1/2 teaspoon ground ginger
    1/2 teaspoon nutmeg
    1/2 teaspoon salt
    1 9 inch unbaked pie crust
    chocolate glaze -- optional

    Recipe

    Preheat oven to 425ºF. With mixer, beat pumpkin, Eagle Brand, eggs, spices and salt. Pour into crust. Bake 15 minutes. Reduce oven temperature to 350?; bake 35 to 40 minutes longer. Cool. Drizzle with Chocolate Glaze if desired. Refrigerate within 2 hours. Store leftovers covered in refrigerator. Makes 6 to 8 servings

    PUMPKIN PIE TOPPING OPTIONS
    Chocolate Glaze: In small saucepan, melt 1/2 cup semi-sweet chocolate chips with 1 teaspoon solid shortening. Sour Cream Topping: Assemble pie as directed at left. Combine 1 1/2 cups sour cream, 2 tablespoons sugar and 1 teaspoon vanilla extract. After pie has baked 30 minutes at 350ºF, spread mixture evenly over pie; bake 10 minutes longer.

    Streusel Topping: Assemble pie as directed at left. Combine 1/2 cup packed light brown sugar and 1/2 cup unsifted flour; cut in 1/4 cup cold butter until crumbly. Stir in 1/4 cup chopped nuts. After pie has baked 30 minutes at 350°F, sprinkle mixture on top of pie; bake 10 minutes longer.
