    2 egg yolks
    2 cups milk
    1/2 cup sugar
    2 envelopes unflavored gelatin
    1/2 cup rum or 1 tsp. rum extract
    1 cup whipping cream
    9 inch baked pie shell

    Recipe



    Combine egg yolks, milk, sugar and gelatin in a saucepan, beating with wire whisk to remove all lumps. Stir over medium heat until gelatin is completely dissolved and mixture is heated, but do not boil. Stir in rum. Chill until it begins to thicken. Whip cream until stiff. Fold into gelatin mixture and heap into pie shell. Chill. Garnish top with additional cream and decorate with nuts or fruit as desired.
