    Pecan: Self-Crusting Pecan Pie

    List of Ingredients

    4 egg whites
    1/3 teaspoon cream of tartar
    1 cup sugar
    1 cup Ritz crackers, crumbled
    1 cup pecan halves, chopped

    Recipe

    Beat egg whites until frothy. Add cream of tartar. Slowly add 1/2 cup of the sugar, beating until stiff. Combine crumbled crackers with remaining 1/2 c. sugar and pecans. Fold into stiffly beaten egg whites. Pour into a lightly greased 9" pastry pan. Bake in a preheated 300ºF oven for 45 minutes. Serve warm with a scoop of ice cream.
