    Chocolate: Simple Chocolate Mousse Pie

    List of Ingredients

    2 cups fine ground chocolate wafer cookies
    1/4 cup melted butter

    MOUSSE:
    1 pound semisweet chocolate
    6 eggs
    2 cups heavy cream

    Recipe

    CRUST: grind chocolate wafers into fine meal. Combine with butter and line a 10" springform pan bottom and sides. FILLING: melt chocolate in double boiler over low heat. Whip 4 egg whites until stiff. Whip cream until stiff. Add 4 egg yolks and 2 whole eggs to chocolate, and beat until smooth and chocolate color lightens. Scrape bowl often to avoid lumps. Fold whites into chocolate mixture, being careful to fold only until smooth and blended. Pour slowly into pan, then cover and freeze overnight. Remove from pan and place on dessert platter. Decorate or garnish, and allow to soften.
