    Pecan: Spiced Pecan Pie

    List of Ingredients

    unbaked 9" pie crust
    2 eggs, separated
    1 cup sugar
    1 teaspoon ground cinnamon
    1 teaspoon ground cloves
    2 tablespoons apple cider vinegar
    3/4 cup pecan halves
    1/2 cup seedless raisins
    1/2 stick butter, melted
    unsweetened whipped cream
    cinnamon

    Recipe

    Beat egg yolks until light and thick. Add sugar, cinnamon and cloves. stir in pecans, raisins and melted butter. Beat egg whites until stiff; fold gently into pecan mixture. Do not beat. Add vinegar as you fold. Pour into prepared pie crust. Bake in 400ºF oven for 10 minutes. Reduce temperature to 350ºF and continue to bake pie for 25 minutes. Remove from oven to cool on wire rack. Cool completely to room temperature before cutting. Serve with unsweetened whipped cream and dust with cinnamon. Refrigerate leftovers.
