    The Easiest and Best Lemon Tart

    List of Ingredients

    CRUST:
    1 cup flour
    1/2 cup butter
    1/4 cup sugar
    1 egg, lightly beaten
    2 tablespoons grated lemon peel

    FILLING:
    2/3 cup lemon juice
    1/2 cup sugar
    2 tablespoons melted butter
    4 eggs

    Recipe

    For filling, beat together first 3 ingredients until well blended. Beat in eggs, one at a time until thoroughly blended. For crust, in a food processor, blend together flour, butter and sugar until mixture is size of small peas. Add the beaten egg and lemon peel, and pulse 4-5 times or until dough clumps together. Place dough on floured wax paper and shape into a disc. Sprinkle top with a little flour. With floured fingers, pat dough on the bottom and sides of a lightly greased 10" tart pan with a removeable bottom. Bake at 375ºF for 20 minutes or until crust is lightly browned. Allow to cool for 15 minutes. Pour lemon filling into prepared crust, place pan on a cookie sheet and continue baking for 15-20 minutes or until custard is set. Allow to cool. Decorate top with fresh berries. Serves 12.
