    Beans: 2 pt. Old Fashioned Baked Beans

    1 package dried navy beans (16 ounce)
    1 1/2 quarts water
    2 cups chopped onion
    1 cup reduced-calorie ketchup
    1/2 cup chopped lean ham
    1/2 cup molasses
    1 tablespoon prepared mustard
    1/2 teaspoon salt
    1/2 teaspoon pepper
    cooking spray

    1. Sort and wash beans; place beans in a Dutch oven. Cover with water to 2 inches above beans; cover. Let stand 8 hours. Drain and return to pan. 2. Add 1 1/2 quarts water and onion to pan; bring to a boil. Cover, reduce heat and simmer 2 hours. Drain beans, reserving two cups cooking liquid. 3. Preheat oven to 350 degrees F. Combine bean mixture, reserved cooking liquid, ketchup, and next 5 ingredients in a large bowl; stir well. Spoon mixture into a 3-quart casserole coated with cooking spray. Bake, uncovered for 1 1/2 hours or until beans are tender. Serves 15.

    COOKING TIPS * Before cooking, carefully sort through the dried beans to remove and discard any rocks or darkened or blemished beans that may have been overlooked during packaging.

    * To keep the fat content low, our recipe uses lean cooked ham, which provides a traditional smoky flavor.

    * You can test the baked beans for doneness in one of two ways: Either spear a couple of beans with a fork, or press 1 or 2 cooled beans between your fingers to feel how tender they are.

    * If you don't have dried navy beans on hand, Great Northern beans can be substituted.
