    To keep the baking time short, this quiche-style breakfast bakes in individual dishes.

    List of Ingredients




    1 small zucchini, halved lengthwise and thinly sliced
    1 medium red onion, chopped (1/2 cup)
    1/2 cup chopped red or green sweet pepper
    2 cloves garlic, minced
    2 teaspoons olive oil or cooking oil
    6 egg whites
    1 egg
    1 cup skim milk
    1/4 teaspoon dried Italian seasoning, crushed
    1/4 cup shredded part-skim mozzarella cheese (1 oz)

    Recipe



    In a medium skillet cook zucchini, onion, sweet pepper and garlic in hot oil till onion is tender. ÊIn a medium bowl combine egg whites, whole egg, milk, and Italian seasoning; mix well. ÊStir in cooked mixture. ÊPour into four individual (about 4 1/2 inches in diameter) quiche dishes. ÊBake in a 350 degree oven for 15 to 20 minutes or till set. ÊSprinkle each serving with mozzarella cheese. ÊLet stand 5 minutes before serving.

    Makes 4 servings.
