    2 pt. Baked Banana Doughnuts

    List of Ingredients




    -2 ripe bananas mashed
    -2 egg whites
    -1 tabelspoon vegtable oil
    -1 cup packed brown sugar
    -1 1/2 cups all purpouse flour
    -3/4 whole wheat flour
    -2 teaspoons baking powder
    -1/2 teaspoon baking soada
    -1/4 teaspoon pumpkin pie spice
    -1 tabelspoon granulated sugar
    -2 tabelspoons chopped walnuts [optional]

    Recipe



    Preheat oven to 425
    Spray baking sheet with nonstick cooking spray
    Beat bananas, egg whites, oil, and brown sugar together
    Add the flours, baking powder, baking soda, and pumpkin pie spice. Mix till well blended
    Let stand for 5 minutes for dough to rise
    Scoop out heaping tabelspoonfulls of dough onto baking sheet
    Using rubber spatula or butter knife creat the doghnut hole in the center of dough [if dough sticks sprak knife or spatula with veggie oil cooking spray]
    Smooth outside edges of dough into a round doughnut shape [I guess if you're lazy you could probably just make cookies and forget this whole shaping these things into doughnuts, unless the center of these does not cook thoroughly]
    Sprinkle doughnuts with granulated sugar and walnuts
    Bake 6-10 minutes

    Variation: use 8 oz solid pack pumpkin instead of bnananas for pumpkin doughnuts

    Recepie yields about 22 doughnuts, at 2 pts. each.
