    2 pt. Power Pancakes

    In a blender, put 1/2 cup egg beaters, 1/4 cup cottage cheese, 1/2 cup slow cooking oats. Blend on high until well mixed.
    Then you can add any or all of these:
    1/2 tsp. vanilla
    1 packet Equal
    1/2 tsp. cinnamon
    Pour 1/3 cup of batter onto prepared griddle or skillet. Cook as you would any pancake. This recipe makes 3 pancakes if you measure out in 1/3 cup measurements.

    Note from original poster: I make all 3, but only eat 1 and save the other 2 in the fridge for 2 other days. Each pancake is under 2 points. I put 1 tsp. butter and 1 TB SF FF syrup on each for an extra point. You can use SF jam, or whatever you wish.
