    1/3 cup green pepper -- chopped
    1/3 cup onion -- chopped
    1 teaspoon fresh garlic
    2 cups potatoes -- cooked, sliced
    1 tablespoon italian seasoning
    pepper -- to taste
    2 cups Egg Beaters¨ 99% egg substitute
    parmesan cheese
    3/4 cup mozzarella cheese

    SautŽ vegetables, garlic Add potatoes, Italian seasoning, pepper. Add Eggbeaters, reduce to low heat and cook 10-12 minutes, without stirring Sprinkle with parmesan, and then cover with mozzarella Broil 3 mins. until browned on the top (I didn't have a frying pan that could be put under the broiler, so I slipped the entire Frittata into a 9x9x2 casserole dish and put that under the broiler). Serves 4.
