    4 pt. Tomato Basil Quiche

    List of Ingredients




    1 cup slivered onion
    1 clove chopped garlic
    3/4 cup shredded lowfat mozzarella cheese
    1 cup plum tomatoes, sliced 1/4 inch thick
    1/4 cup shredded fresh basil
    1 cup evaporated skim milk
    1 1/2 tsp cornstarch
    1/4 tsp fresh pepper
    1 cup egg beaters (=2 eggs)
    1 piecrust

    Recipe



    Saute onion and garlic in cooking spray until slightly brown. Spread onion mix on bottom of pie crust. Sprinkle with chesse. Arrange tomatoes slices over cheese then top with basil. Combine milk, cornstarch, pepper and eggs until smooth. Pour over tomatoes. Bake at 350 for 45 minutes or until knife inserted 1 inch from center comes out clean. Let stand 10 minutes then enjoy!
