    1 1/2 loaves (24 ounces) day-old French bread, crusts removed
    4 ounces low-fat Monterey Jack cheese, grated (1 cup)
    4 ounces low-fat sharp Cheddar cheese, grated (1 cup)
    8 ounces low-fat Swiss cheese, grated (2 cups)\
    14 ounces (2 packages) cooked turkey link sausage, thinly sliced
    4 large green onions, finely chopped
    32 ounces egg substitute
    2 cups non-fat milk
    1/2 cup white wine
    1 tablespoon dry mustard
    Pinch cayenne pepper
    1/4 teaspoon freshly ground black pepper
    1 1/2 cups light sour cream
    4 ounces Parmesan cheese, freshly grated (1 cup)

    Recipe



    Coat 2 9-by-13-inch pans with non-stick spray. Lay bread in pans. Sprinkle with Jack, Cheddar and Swiss cheese, and place sausage and green onions on top. Beat egg substitute, milk, wine, mustard, cayenne and black pepper until foamy. Pour over ingredients in baking dishes. Refrigerate overnight. Remove pans from refrigerator 30 minutes before cooking. Preheat oven to 325¼. Bake covered for 1 hour. Remove from oven, spread with sour cream and sprinkle with Parmesan cheese. Bake uncovered until golden brown, about 10 more minutes.

    Each pan makes 10 servings, 20 servings in all. (5.5 pts. per serving)
