    6 pt. Savory Sausage Bread Casserole

    List of Ingredients




    1 1/4 cups drained chopped bottled roasted red bell peppers
    1 cup skim milk
    3 tablespoons red wine vinegar
    1/2 teaspoon salt
    2 large eggs, lightly beaten
    6 2/3 cups (1-inch) cubed stale French bread (about 8 ounces)
    1/2 cup (2 ounces) shredded Asiago cheese, divided
    1/2 pound fresh turkey breakfast sausage links
    1 cup chopped onion
    1/2 teaspoon fennel seeds
    1/8 teaspoon pepper
    2 garlic cloves, minced
    Cooking spray

    Recipe



    1. Combine first 5 ingredients in a large bowl, and stir well. Add French bread cubesand 1/4 cup Asiago cheese; toss well to coat. Let bread mixture stand 30 minutes.
    2. Preheat oven to 350 ¼F .
    3. Remove turkey sausage from casings. Cook sausage, chopped onion, oregano, fennel seeds, pepper, and minced garlic in a large nonstick skillet over medium-high heat until sausage is browned, stirring to crumble. Drain well. Add sausage mixture to bread mixture, and stir well.
    4. Spoon into an 11x7-inch baking dish coated with cooking spray. Sprinkle with remaining 1/4 cup cheese. Bake at 350¼ for 30 minutes. Let stand 10 minutes before serving.

    Yield: 6 servings.
