    3 pt. Ice Cream Cookie Sandwich

    1 box Betty Crocker choc. fudge cake mix
    2 eggs
    1/2 cup unsweetened applesauce
    1 tub Fat Free Cool Whip (thawed)

    Recipe



    Preheat oven to 350¼F. Spray cookie sheets with Pam. Mix first three ingredients. Drop by tablespoonful onto cookie sheet spaced 2"apart,bake for 12 minutes. Cool completely on wire rack. Batter should make a total of 36 cookies. Put 2 tablespoons cool whip on 1 cookie, cover with another cookie.Repeat to use all cookies. Wrap each in plastic wrap. Put into freezer until frozen.

    Makes 18 servings; 3 pts. per sandwich

    Original poster's notes: Tastes like having an ice cream sandwich. I haven't tried it yet, but probably would be good using other flavors of cake mix. Also cookies are good without coolwhip. Cookies are 1 pt. each.
