    List of Ingredients




    8 ounces light cream cheese, softened
    1 cup low-fat ricotta cheese
    1 tablespoon rum or brandy
    1/4 cup superfine sugar
    1/2 cup strong espresso or good quality coffee, cooled
    16 ladyfingers (see note)
    2 tablespoons unsweetened cocoa powder, divided

    Recipe



    Beat together the cream cheese, ricotta, rum and sugar with an electric mixer until lightened and creamy. Set aside. Pour the coffee into a shallow bowl. Dip one side of each ladyfinger into the coffee. Lay half of the ladyfingers close together, coffee-side down, over the bottom of a 9-inch square baking dish. Spread with half of the cheese and dust with half of the cocoa. Repeat the layers with remaining ladyfingers and cheese. Cover with plastic wrap and refrigerate at least 6 hours, or overnight. Dust the top of the tiramisu with the remaining cocoa powder just before serving. Serves 8
    Note: Narrow rectangles of angel food cake can replace the ladyfingers in this recipe.
