    2 serving(s) Keebler reduced-fat ready pie crust
    16 oz fat-free cream cheese
    2 cup(s) canned pumpkin
    2/3 cup(s) water
    1 serving(s) 1 pkg SF Lemon Jell-O
    1 cup(s) 1% low-fat cottage cheese
    2 cup(s) Cool Whip lite whipped topping
    1/2 cup(s) unsweetened frozen strawberries
    2 tsp pumpkin pie spice

    Recipe



    1. Dissolve gelatin in boiling water.
    2. Pour into blender with cottage and cream cheese and pie spice. Blend until smooth, 1-2 minutes.
    3. Pour into bowl, fold in pumpkin. Pour into pie shells. Chill 4 hours.
    4. Gently stir thawed and drain strawberries into the whipped topping. 'Frost' each cheesecake with 1 C fat free or light whipped topping just before serving.

    Serves 16.

    You may also use orange flavored Jell-O.
