    1 1/2 cups sugar
    3/4 cup reduced-calorie stick margarine softened
    1 teaspoon vanilla extract
    2 large eggs
    4 cups all-purpose flour
    2 teaspoons cream of tartar
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 tablespoons sugar
    1 1/2 teaspoons ground cinnamon
    cooking spray

    Recipe



    1. Combine 1 1/2 cups sugar and margarine; beat at medium speed of a mixer until light and fluffy. Add vanilla and eggs; beat well. Combine flour and next 3 ingredients; add to creamed mixture, beating well. Cover and chill 2 hours.

    2. Preheat oven to 400 degrees F.

    3. Combine 2 tablespoons sugar and cinnamon in a small bowl; stir well, and set aside.

    4. Shape dough in 1-inch balls; roll in sugar mixture. Place 2 inches apart on a baking sheet coated with cooking spray. Bake at 400 degrees F for 8 minutes or until lightly browned. Let cool on pan 1 minute; remove from pan. Let cool completely on wire racks.

    Serving size (1 cookie) Makes 72.
